Braised lamb shanks

Count on 1 per person.  A bit less if you are looking at serving apps or a big salad. 
Prep off a mirepoix, perhaps one carrot, one rib of celery and a quarter of an onion per shank.  We’re looking at mirepoix, so medium size bits.
